making the cake



Today was O's birthday... that boy is growing quickly, and now is 6.  I am going to miss the little boy in him, but am loving watching him grow up.  I have been searching for the "just right" chocolate cake recipe- and I think I found one.
Leave it to Martha to hold up to her end of the bargain and print the recipe in this month's EVERYDAY FOOD.  I was excited to see this recipe just in time to try it out for Odin's cake.  I made the cake- single layered, and with my own recipe of chocolate cream cheese frosting (listed below).  Added chocolate shavings with a single cherry on top.  
The ending to a perfect day must include cake.... and today, was perfect.

Family Cream Cheese Frosting

8oz. cream cheese (room temp)
1/2 c. unsalted butter (room temp)
cream together in a mixer until light and fluffy.

add in 1 tsp. of vanilla, and 3-6 cups of sifted powder sugar.  add the sugar 1 cup at a time.  blending after each so that you can gauge if you need to add the last two or three cups.
Frost the cake.  
with what is left, spoon out and lick until your heart's content.  Follow with a large glass of milk. mmmm.... good.
