weekendings


We have had the rains pour over us the past weekend- allowing us to spend much of our time cuddling together in the warmth of our home. It is here where I find my biggest form of peace. I love these times together.
making up games ( turkey tag was a favorite this weekend)
sipping hot chocolate
making soups and breads (who bread, recipe from Soulemoma)
and tickling little tummies and toes.

some of my favorite recipes are found in this amazing new book. Anna Thomas' Love Soup is filled with amazing veggie recipes that smell and taste amazing. This book is already in full use here- and you will love it to.

this weekend's potato soup is an oldie favorite in our house.... and continues to never have any leftovers. The cost for this whole pot of soup was just short of $2 ( without your own garden veggies- for you city folk- it would be around $4)

Potato Soup
4 Tbs. Butter ( yes, the real stuff)
Olive oil
Carrots (3 diced)
green onions (3 chopped)
Celery (2 diced)
~ saute in large pot for about 5 minutes. Add
4 potatoes (peeled and diced) and let heat for another 5 minutes.
~add 1/4 c. flour being sure that all veggies are covered. Cook 5 minutes more.
~add 4 cups chicken stock (or veggie stock) and 1/2 can beer, and 1/4 tsp salt.
let cook on simmer heat for 30 minutes. Do not let boil.
~ whisk in 1 cup parmesan cheese (grated) and 1 cup cheddar cheese (grated)
let cook on simmer heat for an hour or so. Do not let it boil.
Serve with chopped red pepper and fresh dill.
