oh baked potato

okay... so one of my all time favorite things to do lately...
i know...
this is so sad.... really.

I love throwing a few potatoes into my little toaster oven.
turn it on with the timer on 60 minutes.
I come back, and there is a baked potato waiting to be created into something....
something great!

say... like.... soup!
go ahead... start heating up the bacon, because everything is better with bacon!
cut it into small pieces and fry those babies up. these will go nicely on top.

in a dutch oven or soup pot melt some butter (2/3 cup) and add some flour (2/3 cup) on a medium heat allow the "paste" to become smooth and then start to boil. Gently add in 3 cups chicken or veggie stock and 4 cups milk ( I sometimes use a little cream too). Whisk together and it will begin to thicken. add your baked potatoes ( 4-6 potatoes... I use half of the skins, because I like them-but you can do what ever you please!) 1 1/4 cup cheddar cheese, 1 cup sour cream, 4 green onions (chopped), and salt and pepper- to taste. Viola!

let it simmer for a bit- and you have dinner, or lunch... or just a large pot of soup.
anyway you try it- it is very very good!
