UPDATE: Bjorn is healing.... he walks with a band aid on his forehead to remind his brother not to rough house with him to much ( that and he feels obligated to remind me of his "owwwie" ). but other than the band aid you would never guess he was hurt....
he is back to running, climbing, and his wild antics- not to mention being cuter than ever!
along with watching out for Bjorn, I was able to make cheesecakes for a party, knit a second pair of gloves ( cant show you guys- they are a gift!) and began a cross stitch project.
In celebration of Bjorn's health I bring you cheesecake.

My dear friend Meg- hates cheesecake- but likes this recipe- she says it is a perfect balance of all three layers. I have found this recipe to be the easiest and not super rich. Just right for company.
Crust:
2 1/2 c. Graham cracker crumbs
3/4 c. melted butter
combine and press into a buttered 9" pie plate ( or springform)
Filling:
1 (8oz) pkg. soften cream cheese
1/2 c. sugar
1 Tbsp. lemon juice
1/2 tsp. vanilla extract
dash of salt
2 eggs
beat cream cheese till fluffy, gradually add sugar, vanilla, lemon, and salt- until blended. Add eggs one at a time, beat after each. Pour filling into crust. Bake at 325' for 25-30 min.,until set.
Topping:
1 1/2 c. sour cream
3 Tbsp. sugar
3/4 tsp. vanilla
combine all ingredients and spoon over hot cheesecake. Bake 10 minutes longer. cool- chill several hours. ( serves 8)
